香椿有怎樣的吃法?
香椿食用方法很多,通常有油炸香椿魚、香椿拌豆腐、香椿炒雞蛋、鹽漬生香椿、也可將香椿搗爛加鹽攪拌製成香椿糊,再淋上辣椒油,味鮮可口;還可將香椿和大蒜一起搗爛成糊狀,加些鹽和香油、醬油及適量涼開水,做成香椿蒜葉,用其澆拌麵條,別具風味。

香椿芽的采摘宜在穀雨前後,此時的香椿鮮嫩味美,營養價值極高。香椿為生發物,多食易誘使痼疾複發,故慢性疾病患者應少食或不食。

清明前後是采摘香椿芽的好時節,穀雨之後采摘香椿芽,味道就差了,即所謂“雨前椿芽嫩如絲,雨後椿芽生木質”。
